Ingredients
  

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 cup strawberries, hulled and halved
  • 1 large banana, sliced
  • to taste none Maple syrup for drizzling

Instructions
 

  • In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until combined.
  • In another bowl, mix the buttermilk, egg, and melted butter. Gradually add this mixture to the dry ingredients, stirring gently until just combined.
  • Preheat a non-stick skillet or griddle over medium heat.
  • Lightly grease the skillet if necessary. Pour about ¼ cup of the batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes. Flip the pancakes and cook for an additional 2 minutes or until golden brown. Remove from the skillet and let cool slightly.
  • Once the pancakes are slightly cooled, cut them into halves or quarters, depending on your preference.
  • Assemble the skewers by threading a piece of pancake, followed by a strawberry, a slice of banana, and another piece of pancake. Repeat until the skewer is filled, leaving some space at the end for holding.
  • Repeat this process until all ingredients are used up.
  • Serve the pancake skewers on a plate and drizzle with maple syrup before serving.

Notes

You can customize the skewers by adding other fruits such as blueberries or raspberries.
These skewers can be assembled ahead of time and then warmed slightly before serving if desired.
For extra flavor, consider adding a sprinkle of cinnamon to the pancake batter.
