Preheat your oven to 425°F (220°C) if using fresh potatoes. If using frozen fries, follow package instructions.
If using fresh potatoes, wash and peel them, then cut them into thin strips to make fries.
Place the cut fries on the baking sheet and drizzle with vegetable oil. Sprinkle taco seasoning and a pinch of salt over the fries. Toss them to coat evenly.
Bake in the preheated oven for 20-25 minutes or until golden and crispy, flipping halfway through for even cooking.
While the fries are baking, prepare the toppings. Heat nacho cheese sauce in a small saucepan over low heat until warm.
Once the fries are done, remove them from the oven and sprinkle shredded cheddar cheese over the hot fries. Return to the oven for 2-3 minutes until cheese melts.
Serve the nacho fries in a large serving dish. Drizzle with warm nacho cheese sauce, and top with sour cream, diced jalapeños, and chopped green onions as desired.
