Ingredients
  

  • 1 cup cream cheese softened
  • 1 cup sharp cheddar cheese shredded
  • ½ cup pickled jalapeños chopped
  • ½ cup all-purpose flour
  • ½ cup cornmeal
  • 1 teaspoon baking powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup buttermilk
  • Vegetable oil for frying

Instructions
 

  • In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, and chopped pickled jalapeños. Mix well until fully combined.
  • Taste the mixture and adjust seasoning if necessary; set aside.
  • In another bowl, combine the flour, cornmeal, baking powder, garlic powder, paprika, salt, and black pepper. Mix well.
  • Slowly pour buttermilk into the dry ingredients while stirring until you form a smooth batter.
  • Heat vegetable oil in a frying pan over medium heat (about 350°F / 175°C).
  • Take a heaping tablespoon of the cheese mixture, form it into a small ball, and dip it into the batter, ensuring it's well coated.
  • Carefully drop the coated ball into the hot oil. Repeat for several bites, ensuring you do not overcrowd the pan.
  • Fry until golden brown, about 2-3 minutes per side. Use tongs to flip halfway through for even cooking.
  • Once cooked, remove the bites and place them on a plate lined with paper towels to absorb excess oil.
  • Serve hot with your favorite dipping sauce.

Notes

You can adjust the spiciness to your liking by adding more or fewer jalapeños.
For a healthier alternative, consider baking the bites at 400°F (200°C) for 10-15 minutes instead of frying.
