Ingredients
  

  • 1 pound Italian sausage mild or spicy, depending on preference
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 2 medium carrots diced
  • 2 stalks celery diced
  • 1 large potato peeled and cubed
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • to taste salt
  • to taste pepper
  • for garnish fresh parsley chopped

Instructions
 

  • In a large pot or Dutch oven, cook the Italian sausage over medium heat until browned. Break it apart with a wooden spoon as it cooks. Remove excess grease if needed.
  • Add the diced onion, minced garlic, carrots, and celery to the pot. Sauté for about 5 minutes until the vegetables are softened.
  • Stir in the cubed potato, chicken broth, oregano, basil, salt, and pepper. Bring the mixture to a boil, then reduce heat and let it simmer for 15 minutes, or until the potatoes are tender.
  • Carefully stir in the heavy cream and grated Parmesan cheese, allowing it to melt and incorporate into the soup. Simmer for an additional 5 minutes, stirring occasionally.
  • Taste and adjust seasoning if necessary. If the soup is too thick, consider adding more chicken broth to reach your desired consistency.
  • Serve hot, garnished with fresh parsley in each bowl.

Notes

You can substitute the Italian sausage with turkey sausage for a lighter version.
For a vegetarian alternative, you can use mushrooms and other vegetables in place of sausage.
