- 1 pound Italian sausage mild or spicy, depending on preference
- 1 medium onion diced
- 3 cloves garlic minced
- 2 medium carrots diced
- 2 stalks celery diced
- 1 large potato peeled and cubed
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- to taste salt
- to taste pepper
- for garnish fresh parsley chopped
In a large pot or Dutch oven, cook the Italian sausage over medium heat until browned. Break it apart with a wooden spoon as it cooks. Remove excess grease if needed.
Add the diced onion, minced garlic, carrots, and celery to the pot. Sauté for about 5 minutes until the vegetables are softened.
Stir in the cubed potato, chicken broth, oregano, basil, salt, and pepper. Bring the mixture to a boil, then reduce heat and let it simmer for 15 minutes, or until the potatoes are tender.
Carefully stir in the heavy cream and grated Parmesan cheese, allowing it to melt and incorporate into the soup. Simmer for an additional 5 minutes, stirring occasionally.
Taste and adjust seasoning if necessary. If the soup is too thick, consider adding more chicken broth to reach your desired consistency.
Serve hot, garnished with fresh parsley in each bowl.
You can substitute the Italian sausage with turkey sausage for a lighter version.
For a vegetarian alternative, you can use mushrooms and other vegetables in place of sausage.
This soup pairs well with crusty bread or a side salad.
