Ingredients
  

  • 4 medium sweet potatoes About 2 pounds.
  • 4 tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup crumbled goat cheese About 4 ounces.
  • ½ cup chopped walnuts
  • 2 tablespoons maple syrup
  • 2 tablespoons fresh rosemary, chopped Or 1 tablespoon dried rosemary.

Instructions
 

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper if desired for easier cleanup.
  • Peel the sweet potatoes and cut them into 1-inch cubes.
  • In a mixing bowl, toss the sweet potato cubes with olive oil, salt, and black pepper until evenly coated.
  • Spread the sweet potatoes in a single layer on the prepared baking sheet.
  • Roast in the preheated oven for about 25 minutes, turning halfway through, until they are tender and slightly caramelized.
  • While the sweet potatoes roast, prepare the topping by mixing the crumbled goat cheese, chopped walnuts, maple syrup, and fresh rosemary in a bowl.
  • Once the sweet potatoes are done roasting, remove them from the oven and sprinkle the walnut and goat cheese mixture over the top.
  • Return to the oven for an additional 5 minutes until the goat cheese softens slightly.
  • Remove from the oven, and let it cool for a few minutes before serving.

Notes

You can substitute pecans for walnuts if preferred.
For added flavor, consider a splash of balsamic vinegar in the topping mix.
