Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper if desired for easier cleanup.
Peel the sweet potatoes and cut them into 1-inch cubes.
In a mixing bowl, toss the sweet potato cubes with olive oil, salt, and black pepper until evenly coated.
Spread the sweet potatoes in a single layer on the prepared baking sheet.
Roast in the preheated oven for about 25 minutes, turning halfway through, until they are tender and slightly caramelized.
While the sweet potatoes roast, prepare the topping by mixing the crumbled goat cheese, chopped walnuts, maple syrup, and fresh rosemary in a bowl.
Once the sweet potatoes are done roasting, remove them from the oven and sprinkle the walnut and goat cheese mixture over the top.
Return to the oven for an additional 5 minutes until the goat cheese softens slightly.
Remove from the oven, and let it cool for a few minutes before serving.
