  • 1 large pot for boiling pasta
  • 1 colander
  • 1 mixing spoon

Ingredients
  

  • 8 oz pasta (penne or fusilli)
  • 8 oz feta cheese block
  • 2 cups cherry tomatoes, halved
  • ¼ cup olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • to taste salt
  • to taste pepper
  • Fresh basil leaves for garnish (optional)

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a large pot, bring water to a boil and cook the pasta according to package instructions until al dente. Drain the pasta and set it aside.
  • In an oven-safe baking dish, place the feta cheese in the center. Surround it with the halved cherry tomatoes.
  • Drizzle olive oil over the feta and tomatoes. Add the minced garlic, dried oregano, salt, and pepper. Toss the tomatoes gently to coat them in the oil and seasoning.
  • Bake in the preheated oven for about 25 minutes or until the feta is soft and the tomatoes start to burst.
  • Remove the baking dish from the oven and use a fork to mash the feta and mix it with the tomatoes until creamy.
  • Add the cooked pasta to the baking dish and toss well to combine, ensuring the pasta is fully coated in the creamy feta mixture.
  • Taste and adjust the seasoning if necessary. Garnish with fresh basil leaves if desired.
  • Serve immediately and enjoy!

Notes

Feel free to add other vegetables like spinach or zucchini for added nutrition.
For a spicy kick, include red pepper flakes.
This dish can be stored in the refrigerator for up to 3 days, making it great for leftovers. Just reheat before serving.
