- 8 oz pasta (penne or fusilli)
- 8 oz feta cheese block
- 2 cups cherry tomatoes, halved
- ¼ cup olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- to taste salt
- to taste pepper
- Fresh basil leaves for garnish (optional)
Preheat your oven to 400°F (200°C).
In a large pot, bring water to a boil and cook the pasta according to package instructions until al dente. Drain the pasta and set it aside.
In an oven-safe baking dish, place the feta cheese in the center. Surround it with the halved cherry tomatoes.
Drizzle olive oil over the feta and tomatoes. Add the minced garlic, dried oregano, salt, and pepper. Toss the tomatoes gently to coat them in the oil and seasoning.
Bake in the preheated oven for about 25 minutes or until the feta is soft and the tomatoes start to burst.
Remove the baking dish from the oven and use a fork to mash the feta and mix it with the tomatoes until creamy.
Add the cooked pasta to the baking dish and toss well to combine, ensuring the pasta is fully coated in the creamy feta mixture.
Taste and adjust the seasoning if necessary. Garnish with fresh basil leaves if desired.
Serve immediately and enjoy!
Feel free to add other vegetables like spinach or zucchini for added nutrition.
For a spicy kick, include red pepper flakes.
