Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • cup orange juice
  • 1 tablespoon orange zest For a deeper flavor, add an extra teaspoon.
  • 1 cup fresh cranberries (or frozen, thawed) Can substitute with blueberries or raspberries.
  • 1 cup powdered sugar, for glaze
  • 2 tablespoons additional orange juice, for glaze

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease and flour the loaf pan to prevent sticking.
  • In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  • In another bowl, combine the melted butter, eggs, orange juice, and orange zest. Mix well until combined.
  • Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix.
  • Fold in the cranberries, ensuring they are evenly distributed throughout the batter.
  • Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  • Bake in the preheated oven for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
  • Once baked, remove the loaf from the oven and allow it to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  • While the loaf is cooling, prepare the glaze by mixing together powdered sugar and orange juice until smooth. Adjust the consistency as needed with more juice or powdered sugar.
  • Once the loaf is completely cool, drizzle the sweet glaze over the top and let it set before slicing.

Notes

For a deeper orange flavor, add an extra teaspoon of orange zest.
This loaf can be stored in an airtight container at room temperature for 2-3 days or in the refrigerator for up to a week.
Feel free to substitute the cranberries with blueberries or raspberries for a different twist!
