Ingredients
  

  • 2 pounds boneless, skinless chicken breasts
  • 1 can cream of chicken soup 10.5 ounces
  • 1 packet Italian seasoning mix 1 ounce
  • 1 cup cream cheese Softened, 8 ounces
  • 1 cup chicken broth 8 ounces
  • 1 cup grated Parmesan cheese 4 ounces
  • 1 cup diced tomatoes Drained, 8 ounces
  • to taste none salt
  • to taste none black pepper
  • optional none fresh parsley For garnish

Instructions
 

  • Prepare the chicken by placing the boneless, skinless chicken breasts in the bottom of the crockpot. Season with salt and pepper to taste.
  • In a separate bowl, mix together the cream of chicken soup, Italian seasoning mix, cream cheese, and chicken broth until well combined.
  • Pour the soup mixture over the chicken in the crockpot.
  • Add the grated Parmesan cheese and drained diced tomatoes on top of the mixture.
  • Cover and cook on low for 6 hours or until the chicken is cooked through and tender.
  • Once done, shred the chicken directly in the crockpot using two forks and stir everything together to combine the flavors.
  • Serve hot, garnished with fresh parsley if desired.
