Start by popping the popcorn according to package instructions. Once popped, place it in a large mixing bowl.
Add the salted pretzels and unsalted peanuts to the bowl with the popcorn. Gently mix using a silicone spatula to combine the ingredients evenly.
In a medium saucepan over medium heat, combine the unsalted butter, brown sugar, and light corn syrup. Stir continuously until the mixture begins to boil. Allow it to boil for 2 minutes without stirring.
Remove the saucepan from heat and carefully stir in the vanilla extract and baking soda. The mixture will bubble up.
Pour the hot mixture over the popcorn, pretzels, and peanuts. Quickly toss everything together until all the dry ingredients are coated with the caramel mixture.
Transfer the coated mixture into the Crockpot and spread it out evenly. Set the Crockpot on low and cook for about 2 hours, stirring every 30 minutes to ensure even cooking.
While the mixture is cooking, melt the milk chocolate chips and white chocolate chips in separate bowls using a microwave, heating in 30-second intervals until smooth.
Once the Crockpot mixture is done cooking, pour it out onto a lined baking sheet to cool slightly. Drizzle the melted chocolate over the top and finish with optional candy sprinkles for decoration if desired.
Allow the entire mixture to cool completely before breaking it into pieces.
