Ingredients
  

  • 1 lb ground beef
  • 2 cups cooked rice
  • 10.5 oz cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1 cup diced tomatoes canned or fresh
  • 1 cup frozen mixed vegetables peas, carrots, corn
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt
  • to taste pepper
  • 1 tablespoon olive oil for cooking

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned, about 5-7 minutes, breaking it up into small pieces.
  • Drain excess fat from the skillet. Stir in garlic powder, onion powder, salt, and pepper.
  • Add the cooked rice, cream of mushroom soup, diced tomatoes, and frozen mixed vegetables. Mix well until everything is combined and heated through, about 5 minutes.
  • Transfer the mixture into the baking dish and spread it out evenly. Sprinkle shredded cheddar cheese on top.
  • Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and let it sit for a few minutes before serving.

Notes

You can customize this casserole by adding different vegetables or spices according to your taste.
Leftover casserole can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the microwave.
For a healthier version, you can use ground turkey or replace the cream of mushroom soup with a homemade white sauce.
