Ingredients
  

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • to taste salt
  • to taste pepper
  • 8 small corn or flour tortillas
  • 1 cup shredded cabbage
  • 1 cup diced tomatoes
  • 1 avocado, sliced
  • ½ cup sour cream or Greek yogurt
  • 2 tablespoons lime juice
  • to taste fresh cilantro for garnish optional

Instructions
 

  • In a mixing bowl, combine the olive oil, chili powder, cumin, garlic powder, salt, and pepper. Add the shrimp and toss until evenly coated in the seasoning.
  • Heat a large skillet over medium-high heat. Once hot, add the seasoned shrimp. Cook for about 2-3 minutes on each side, or until the shrimp turn pink and are cooked through.
  • While the shrimp are cooking, warm the tortillas in a separate skillet or microwave for about 30 seconds until pliable.
  • In a small bowl, mix the sour cream (or Greek yogurt) with lime juice to create a creamy sauce.
  • Assemble the tacos: Place a few shrimp on each tortilla, then top with shredded cabbage, diced tomatoes, avocado slices, and a drizzle of the creamy sauce. Garnish with fresh cilantro if desired.
  • Serve immediately and enjoy!

Notes

Feel free to customize the toppings with your favorite ingredients such as cheese, jalapeños, or hot sauce.
For a spicier kick, add cayenne pepper to the shrimp seasoning.
Leftover shrimp can be stored in an airtight container in the refrigerator for up to two days.
