Ingredients
  

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, diced
  • 1 medium onion, thinly sliced
  • 1 bell pepper red or green, thinly sliced
  • 1 bell pepper yellow or orange, thinly sliced
  • 3 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup corn canned or frozen
  • 1 cup salsa
  • 1 ½ cups shredded cheddar cheese
  • Fresh cilantro, chopped for garnish

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat the olive oil over medium heat. Add the diced chicken and cook until browned, about 5-7 minutes.
  • Add the sliced onion and bell peppers to the skillet, cooking until they are tender, about 5 minutes.
  • Stir in the minced garlic, chili powder, cumin, paprika, salt, and black pepper, and cook for an additional 1-2 minutes until the spices are fragrant.
  • In a large mixing bowl, combine the cooked chicken and vegetable mixture with the black beans, corn, and salsa. Mix well.
  • Pour the chicken mixture into a greased 9x13-inch baking dish.
  • Sprinkle the shredded cheddar cheese evenly over the top.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
  • Remove from the oven and let it cool slightly. Garnish with fresh cilantro before serving.

Notes

You can customize this casserole by adding other vegetables like zucchini or mushrooms.
For a spicier version, consider adding jalapeños or using a hotter salsa.
This dish can be made ahead of time and stored in the refrigerator; just reheat before serving.
Serve with sour cream, avocado, or tortilla chips on the side for added flavor.
