  • 1 mixing bowl
  • 1 measuring cups

Ingredients
  

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • to taste Fresh parsley, chopped (for garnish)

Instructions
 

  • If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning.
  • In a mixing bowl, combine the olive oil, minced garlic, grated Parmesan cheese, dried Italian herbs, salt, and black pepper. Mix well to create a marinade.
  • Add the cubed chicken breasts to the bowl and coat them evenly with the marinade. Let the chicken marinate for at least 10 minutes, or up to 2 hours in the refrigerator for more flavor.
  • Preheat the grill or oven to medium-high heat (about 400°F/200°C).
  • Thread the marinated chicken cubes onto the skewers, leaving a little space between each piece for even cooking.
  • If grilling, place the skewers directly on the grill and cook for about 10-12 minutes, turning occasionally until the chicken is cooked through and has nice grill marks. If baking, place the skewers on a baking sheet lined with parchment paper and bake for 12-15 minutes.
  • Remove the skewers from the heat and let them rest for a couple of minutes. Garnish with chopped parsley before serving.

Notes

Feel free to add bell peppers, cherry tomatoes, or zucchini to the skewers for extra flavor and color.
Serve with a side of your favorite dipping sauce, such as ranch or marinara, for a tasty complement.
