Ingredients
  

  • 1 lb ground turkey
  • 2 medium sweet potatoes, peeled and diced About 1.5 lbs in total.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup bell peppers, chopped Any color.
  • 1 cup corn Fresh, frozen, or canned.
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 2 tablespoons olive oil
  • ¼ cup chicken broth or water
  • to taste fresh parsley for garnish Optional.

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • In a large skillet over medium heat, add the olive oil. Once heated, add the chopped onion and garlic. Sauté until the onion becomes translucent, about 3-4 minutes.
  • Add the ground turkey to the skillet and cook until browned, breaking it up with a spoon as it cooks, about 6-7 minutes.
  • Stir in the diced sweet potatoes, bell peppers, corn, ground cumin, paprika, salt, and black pepper. Pour in the chicken broth or water to help steam the sweet potatoes. Mix well and cover the skillet. Let it cook for about 10-15 minutes until the sweet potatoes are tender.
  • Once the sweet potatoes are cooked, transfer the mixture to a 9x13 inch baking dish. Spread it evenly and sprinkle the shredded cheddar cheese on top.
  • Bake in the preheated oven for 20 minutes or until the cheese is melted and bubbly.
  • Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley, if desired.
  • Serve warm and enjoy!

Notes

Feel free to customize the casserole by adding other vegetables such as zucchini or spinach.
You can substitute ground turkey with ground chicken or lean beef if preferred.
This dish can be made ahead of time and stored in the refrigerator for up to 3 days; simply reheat in the oven.
