Ingredients
  

  • 4 pieces bone-in, skin-on chicken thighs About 1.5 pounds total.
  • ¼ cup olive oil
  • 2 tablespoons fresh lemon juice
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 1 cup cherry tomatoes, halved
  • ½ cup kalamata olives, pitted and halved
  • to taste fresh parsley, chopped For garnish.

Instructions
 

  • In a mixing bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, thyme, salt, pepper, and paprika.
  • Place the chicken thighs in a baking dish and pour the marinade over them, making sure to coat each piece evenly. Allow it to marinate for at least 30 minutes, or up to 2 hours in the refrigerator for enhanced flavors.
  • Preheat your oven to 400°F (200°C).
  • After marinating, sprinkle the halved cherry tomatoes and kalamata olives around the chicken in the baking dish.
  • Bake in the preheated oven for 30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and is golden brown.
  • Once done, remove from the oven and let it rest for a few minutes. Garnish with chopped fresh parsley before serving.

Notes

For an even more intense flavor, consider marinating the chicken thighs overnight in the refrigerator.
Serve with a side of couscous or a fresh green salad for a complete meal.
Feel free to add other Mediterranean vegetables, such as bell peppers or zucchini, to the baking dish for extra nutrition and flavor.
